Currently, the reference "electronic edition" of the VMs text is Gabriel Landini interlinear file (interln16.evt), which contains transcriptions done by Friedman, Currier, Tiltman, and others (most of them compiled by Jim Reeds and Jacques Guy).
Although it was produced mainly as an archival compilation of those early transcription efforts, Landini's interlinear is also the largest and best-documented sample of VMs text that is publicly available. However, because of its archival purpose, Landini's file uses the FSG encoding of the Voynich alphabet, and does not include many recent transcriptions.
For most of my analysis work, I have been using using a private version of Landini's interlinear, which I translated to Landini and Zandbergen's new European Voynich Alphabet (EVA). My version also includes a non-trivial amount of new transcriptions, by myself and by others---especially John Grove's extensive list of labels and "titles", and his transcription of the Biological pages.
For my convenience(?), I split the text into one separate file for each "text unit". By this I mean a page, or a part threof, containing a single type of text (paragraphs, labels, circular text, etc.). Today, that means 682 separate files. You can get them all those files in one package in tar+gzip format (interln16e3.tgz, 203 kB) or PKZIP format (int16e3.zip, 333 kB). These packages include a machine-readable index that lists the text units and their attributes, in their logical order; and extensive comments describing the differences between this version and Landini's original file.
If you prefer, you can get all the text in a single file, either in gzip format (interln16e3s.evt.gz, 173 kB) or PKZIP format (int16e3s.zip, 174 kB). In that case, you may want to fetch also the index file.
